We have an open feature request for Taskbar Profiles, so I will add your vote to it. In the meantime, you can make it slightly easier by backing up the settings (Settings Options Export) for each configuration. You can then load the appropriate backup when switching the cables.

I have got two computers connected to the exact same display config (3 displays).
But when the display order in Windows is different (can be reproduced by just switching cables), the splits seem to be restored fine, but the taskbar configuration is wrong. So I have to click thousand times to fix it every time.
