It sounds like you're referring to the Aero Peek Delay, that can be adjusted in the DisplayFusion Advanced Settings. Setting that to a high value will prevent that from happening unless you have it hovered for a long time

Is there a way to configure the way Alt-Tab rotates the screens? I would like to have the same funcionality as Windows.

Regular Windows 10 behavior is: when I start to rotate the screens by holding Alt and pressing Tab, the carrousel of thumbnails rotate accordingly, then I select the window I choose. I can go back and forth through the carrousel, see the thumbnails and choose one. That is the current functionality in Windows 10.

DisplayFusion works a bit diferently. When the next window to be shown is a window that is actually present in that particular monitor, then after tapping Tab, the alt-tab carrousel dissapears, and shows the full window screen. Next tap makes the carrousel reappear again, shows the next windows in thumbnails.

I would like to DisplayFusion just show the carrousel all the time I press Alt-Tab and not switch back to presenting the next window in full screen. Is that possible? I couldn't find any option in the DF menu.
