I feel your pain. Spanning across selected monitors (not all) is planned for inclusion in the next major release, version 3.2. I'm using three monitors: 2 "normal" and one little USB Montor (800x480) .
When I use the the option 'Span an Image across all Monitors', the little one is also used.

But I would like to span the image only across the two montiors.
So I would be nice to have an option to choose the monitors to span.
