My Windows 7 user on my work laptop is not a local admin, however I have the credentials for the local admin account. When I click on the "Show processes from all users" within Task Manager, I get prompted for the credentials of an admin account. After entering them, the Task Manager restarts as the local admin account and DF no longer seems to be able to "control" it.

Is that "normal" or a known limitation?

That is unfortunately a known limitation. In order for DisplayFusion to be able to manage elevated windows, it also needs to be elevated. You can exit DisplayFusion, then right-click the DisplayFusion shortcut and choose "Run as administrator," and that should solve this issue, though you might run into a couple of other minor issues when doing that.
