I'm looking to turn my spare laptop into a third monitor.

I found the following tools and tutorials to help do that:

So I would be creating a third display, a virtual one, and would stream it via the local network to the laptop.

Will DisplayFusion play nice with this?

It depends on how those utilities present the virtual display. It won't hurt anything to try it, but if DisplayFusion doesn't recognize them as monitors (i.e. it doesn't put a taskbar on them, and can't set the wallpaper), just let me know and we'll see what we can do :)
