Monitor 1 - 2560x1440 - Main-
Monitor 2 - 1920x1080 - Aux - this is the monitor the task bar is being disabled on.
I'm not sure what is causing it, possibly alt-tabbing.
In the DisplayFusion Settings > Taskbar tab, is the "Enable multi-monitor taskbars" setting itself being disabled?
