My secondary taskbars still appear transparent even though the opacity is set to 100%. It doesn't look like this is listed as a known issue. Is there a fix for this or will this be fixed a future update?

In the Windows Settings app > Personalization > Colours section, if you disable the "Make Start, taskbar, and action centre transparent" option, that should make the taskbars on all monitors opaque :)
